
Sturgeon Bay – Door County is already one of the few provinces in Wisconsin with an authentic Polish restaurant. Now, this spring, it will have two.
This is because of Prince of Peruvi In Ephraim, it expands, with a second location that is scheduled to open on May 15 or about 15 May at the former Wanda Jin family restaurant on the EGG Harbour Road in the Bay of Sturgeon.
You will be much larger than the place in Ephraim, which will allow the owner and chef Krzysztof Kro to provide hours throughout the year (the original place in Ephraim will remain open from May to November, most likely this year in the same date of the new site), and an expanded list and perhaps even the affordable housing for restaurant employees .
Kroll came from his hometown of Siemianowice Slaskie in southern Poland to the United States to work in summer restaurants from 2012-14 through the work program & travel in the United States of America, under the auspices of the Council for International Educational Exchange. He was the first of that three consecutive summer in the United States in Bab County, and he loved the peninsula a lot, and moved there as soon as he finished his university studies.

“I was counting if there was time to open another place and location, it would be,” he said.
Kroll said he thought about opening a second site for a period of time, to a large extent because his increasing work exceeds his available area.
The building where its new location, which is the former Wanda Jan, is 3000 square feet with a kitchen of 1000 square feet, two potential rooms to prepare food, freezer and cooler. Compare this to the original Prince of Pierogi building in Ephraim with a total of 240 square feet – or the youngest 12 times – with everything he needed for a kitchen and food preparation space.
“We have crossed our little kitchen in Ephraim for a period of time,” said Kroll. “It has become increasingly difficult to produce all our food with all our size. Basically, our entire area is our kitchen.”
Kroll said that the largest area will allow Prince of Pierogi to simplify its food production, while preparing all its elements made of scratching in the new area. Kroll said that possessing the largest kitchen and preparatory rooms should also lead to higher quality food, and the Pierogi can be fried as well as steam for cooking in the new kitchen. Ephraim employees will still have preparatory work in the line, but they can focus more on sales and customer service.
Kroll said the largest kitchen also allows opportunities to expand the list, especially at the Sturgeon Bay Restaurant to provide some distinction between the two sites. He also hopes to reopen the building’s driving window to go with its eating seats and its opposites.
Besides the largest sitting capacity, Kro also looks at a space in the new restaurant where it can carry Perrink of Pierogi and other relevant elements, such as Polish foods, spices and gifts.
Kroll pointed out that employment in restaurants and other hospitality institutions still represents a decisive problem in Bab County, and he is always looking for people to join his crew, especially with the new second site.
In aware of the long -term problems that workers faced to find affordable housing on the peninsula, he hopes to build two 750 square feet houses on an acre from the ground behind the SturGeon Bay Restaurant, which is part of his property. (He currently lives in a small space in the restaurant, at least initially). Kroll said that he will submit his plan to the City Plan Committee, which needs to consider the requirements of property division, during its meeting on March 20.
